Turkey Meat Loaf Recipe

If you like turkey, lower carb options, and high protein, then here you go!

Ingredients:

2 sections of ground turkey

(Not positive on the weight. Bought at Costco.)

3 slices of Ezekiel Bread

Toasted, then made into breadcrumbs. I used a Vitamix.

3 eggs

California Seasoned Pepper

(Peppercorn blend with dried bell pepper and garlic from Penzey's)

Herbs de Provence

Salt and Pepper

1 medium onion

(or about the same volume of shallots)

Butter or olive oil

Instructions:

Caramelize onion/shallots in pan with butter or olive oil.

Season with salt and pepper.

Combine turkey, eggs, breadcrumbs, and onion/shallots in mixing bowl.

Shake in Herbs de Provence and California Seasoned Pepper. Add some more salt.

Mix.

Spread into 2 loaf pans.

Bake at 350 F for about 1 hour and 10 minutes.
